Mechanical cold pressing is used to extract the oil from citrus fruits, and a more complex technique is used to extract the oil from fragile flowers, which results in an absolute rather than an essential oil. Delicate flowers cannot tolerate the high temperatures required for steam distillation, which is the method used to extract essential oils.
